Healthy vegan muesli yoghurt parfait topped with fresh fruit and garnished with edible flowers and mint leaves!
Nothing beats starting your day with an amazing breakfast, especially when you can have your favourite dessert for breakfast!
I strongly believe that starting your day right, means that you will have a good day ahead of you. So to break the routine of waking up in the morning, dragging myself out of bed into the shower, having my usual boring plain porridge for breakfast, and then going to work, I decided to introduce little changes realising that they will have a big impact on the rest of my day. So I decided to substitute my usual breakfasts with something more exciting. And to do so, I started experimenting with different healthy breakfast recipes and found out that these actually motivated me in the morning and helped me become more positive and productive during the day.
I’m a big fan of parfaits, especially the American version of layered cream, custard, ice cream, jelly, fruits, whipped cream and what not! But as much as I enjoy it, I always regret it later. I mean, think about the amount of calories in every parfait cup! While I get tempted to have one or two, I quickly calculate the amount of time I will need to spend in the gym just to burn off the dessert (probably a couple of hours!).
One of my ideas was to make a very healthy but extremely delicious parfaits (with no added sugar!). So instead of layering the usual cream, custard, ice cream, jellies, whipped cream or canned fruits, I decided to layer delicious muesli mix, with vegan yoghurt alternative, fresh fruits and garnish with edible flowers and mint leaves. Not only it turned into a very beautiful breakfast parfait, but it also tasted absolutely amazing! I love such recipes that are enjoyable and nourishing at the same time. But I have to warn you, that these guilt free parfait cups are extremely addictive. You will want to make them every morning, which is a good thing for your body and your mind!

It’s a lovely treat to have as dessert, or you can even make it when expecting guests to come over!
The Muesli contains dried carrots, dates, raisins, sultanas, apple pieces, oat flakes and pecans. So I didn’t add any nuts to the parfaits as the muesli already contains pecans, but I’ve added fresh fruits that I thought would go really well with the flavours. I added passion fruit, blue figs and melon balls. I also didn’t add any sweeteners to these parfaits, as the muesli and the fresh fruits are naturally sweet. But if you have a sweet tooth, you can always add some honey or maple syrup to the yoghurt.
