This weekend is going to be all about brunch! I was away on my holiday to Italy where I got to visit Venice, Verona, Florence, Lake Garda and Rome. I had a WONDERFUL time there, but now I’m back to real life! It’s a little bit difficult to adjust from holiday mode to real life mode, so I’m trying to spend less time inside the house and more time outdoors having fun.
I’m really looking forward to this coming weekend though. On Saturday I’m going to a concert with my friends, then they’re going to sleep over at my place and I’m planning a brunch on Sunday. Brunch will be served outdoors of course and it’s going to be really special.
I’ve been experimenting with lots of interesting brunch recipes, and finally came up with an indulgent creation that is a unique sandwich made with French toast, marshmallows, Nutella and caramel sauce! Something that my friends are going to love!
To make the perfect French toast sandwich, I popped into my local Iceland Foods Supermarket and got the bread that I needed to make this recipe. Iceland Foods now have fresh bread delivered everyday. Their luxury breads are special because they are made with slow dough that rises naturally for an outstanding flavour.
I used the Luxury thick sliced white bread, it’s a batch baked sliced white loaf. This bread is deliciously soft and tasty, and ideal for my French toast S’mores recipe.
I love the fact that I live so close to an Iceland Foods Supermarket, as they offer a wide range of great frozen foods, as well as fresh groceries and now bread too. But they also offer very convenient home delivery so you can always place an order online.
These S’mores sandwiches are extremely easy to make. All you need to do is dip the bread slices in French toast mix, coat with bread crumbs and pan fry until golden. Then to assemble the sandwich, generously spread some Nutella over the French toast, stack with marshmallows and secure with one more slice of French toast. Toppings are also great, you can top with fresh fruit, more marshmallows, caramel or chocolate sauce.
These need to be served immediately, as the marshmallows will be melty and gooey when they’re warm. I like to serve them for brunch, but it’s a lovely treat that can be served for breakfast or any time during the day!

- 3 tbsp milk
- 1 egg
- 1 tsp vanilla extract
- ½ tsp salt
- 1 cup bread crumbs
- 1 tbsp vegetable oil
- 1 tbsp butter
- 4 slices of Iceland Luxury Sliced Thick White Bread
- 18 marshmallows
- Caramel sauce (optional)
- Chocolate sauce (optional)
- Cherries (optional)
- In a large shallow dish, combine milk with egg, vanilla extract and salt.
- In another large shallow dish, lay the bread crumbs.
- In a frying pan, heat oil with butter.
- Take each slice of bread, dip in milk egg mixture then cover in bread crumbs.
- Fry each slice until golden.
- When still warm, spread Nutella over the slice of French toast, place marshmallows and cover with one more slice of French toast.
- Top with caramel sauce or chocolate sauce and fresh fruit.
- Serve immediately.
