Book by Olia Hercules
They always say not to judge the book by its cover. It’s true! But for this book, this saying wasn’t applicable! I choose this book by its cover and its title. And I was not a tiny bit disappointed.
Mamushka in Russian language means “Mummy”. And the title associates the recipes included in this book with the warmth and care of a loving Mummy which is usually expressed though super delicious food that she prepares and generously offers to her children, family and grandchildren. I can feel the warmth just by holding the book in my hands, which makes me feel nostalgic and wants me to come back home very soon!
The book consists of the following sections: Introduction Broths & Soups Breads & Pastries Vegetables & Salads Dumplings & Noodles Meat & Fish Fermented Pickles & Preserves Sweet Conserves Desserts Drinks Index Acknowledgments And for those of you who thought that Russian and Ukrainian cuisines are alike, it’s true that there are lots of crossovers between the two, but once you take a look at this book and you will discover that, due to the country’s history, Ukrainian cuisine has plenty of its own recipes.
Examples of recipes included here are: Borshch (Ukrainian beetroot broth), zelenyy borshch (sorrel broth), kholodnyk (cold beetroot soup), solyanka (piquant Russian broth), spicy Georgian beef soup, Azerbaijani chickpea & mutton soup, Armenian soup with lamb & prune meatballs, tsarska yushka (Tsar’s surf & turf), Greek breads with spring onions, Moldovan breads with cheese & sorrel, Caucasian barbecue flatbreads, deruny (potato cakes with goats’ cheese), Korean carrots, Soviet goose noodles, Ukrainian gnocchi, Central Asian chicken & pasta, Salo (Ukrainian ‘narcotics’), kvashena kapusta (sour cabbage), Armenian pickles, kvasheni pamidory (fermented tomatoes), pal’chyky oblyzhesh (lick-your-fingers tomatoes), watermelon skin jam, Berlin curd cheese biscuits, Napoleon cake, Medovyk (honey cake), Prague cake and Russian fermented rye drink.
