Super fluffy but crispy peanut butter waffles, topped with bananas and chocolate ice cream!
Do you ever bake with egg yolks and end up with extra egg whites that you don’t know what to do with? MAKE WAFFLES! Always make waffles if you have extra egg whites! I was testing out some ice cream recipes today, the recipe that I was testing called for 3 egg yolks, and that meant that I had 3 egg whites that I did not know what to do with. Since I haven’t made any waffles in a while, and we LOVE our waffles, I decided to whip up a batch! The eggs whites make sure that your waffles turn out crispy from the outside, but stay fluffy and soft in the inside. I also added cream of tartar to the egg whites, as that helps you get the lovely crispy texture, but that’s completely optional.
For peanut butter fans, you will fall in love with the recipe! I love the combination of peanut butter + bananas + chocolate = Best combination ever! I can’t think of a better combination when it comes to peanut butter if you’re not adding any chocolate. Oh I’m now dreaming of this banana fluffernutter sandwich!
I quickly whipped these waffles up for my Mum, my niece and myself. We had 2 waffles each and they were gone in no time!

- 3 egg whites
- 1¼ cups flour
- 4 tsp baking powder
- 1 tsp cream of tartar (optional)
- 1½ whole milk
- 2 tbsp peanut butter
- a pinch of salt
- 2 bananas
- ice cream (optional)
- Beat egg whites until stiff peaks. Add cream of tartar and beat for a few seconds.
- In a medium bowl mix the rest of the ingredients together (except for the bananas and the ice cream).
- Grease your waffle iron, and cook the waffles.
- When the waffles are ready, top with slices of banana and add scoops of ice cream.
