Ice cream ginger beer float made with rum, whipped cream and maraschino cherries!
Christmas is only 10 days away, and in our house we are already celebrating with these really fun ice cream ginger beer floats! Ginger beer is new to me, I have no idea why I’ve never tried ginger beer before but OH MY GOSH IT’S SO GOOD!
I’ve had so much fun experimenting with these ice cream floats yesterday, and I came to the conclusion that the simpler it is, the better! It’s like a rich milkshake, but with much more interesting flavours and texture.
The flavours are really special, as these floats are made with vanilla ice cream, rum, spiced ginger beer, whipped cream and topped with maraschino cherries. My favourite part? Is pouring the ginger beer over the ice cream to make the float!
Hollows and Fentimans spiced ginger beer is a wonderful winter warming drink, it’s delicious and aromatic as it’s infused with exotic spices from the East. It’s a great alternative to mulled wine, and during this time of the year I feel like drinking it everyday! It is also gluten free certified, and alcohol is 4% vol.
Adding rum to this ice cream float is optional, but it adds a lot to the taste. I personally like both versions, with or without the rum but it depends on how much do you like rum, and if you want to add more alcohol to this ice cream float or not.

- 2 scoops vanilla ice cream
- 1 cup Hollows & Fentimans spiced ginger beer
- 1 tbsp rum (optional)
- ⅓ cup whipped cream
- Maraschino cherries
- Add ice cream scoops to a glass.
- Pour rum over ice cream, then top with ginger beer.
- Add some whipped cream, and top with a maraschino cherry.
