Easy and healthy garlic shrimp quinoa!
I love dishes that are easy to make, ready in no time and are delicious at the same time! With my full time job, it’s difficult to spend a lot of time in the kitchen preparing food and cooking, except for when it’s the weekend and I’m cooking for the blog! I’m not a huge fan of take outs either, as I try to eat healthy and buying ready meals all the time is not something that I prefer.
This garlic shrimp quinoa dish is one of these easy and healthy meals that I’m talking about. It doesn’t require a lot of effort, and is ready in under 30 minutes. What I love about this, is cooking the quinoa with sauteed onion and fragrant garlic, as it takes this dish to a whole new level!
And since I’ve been trying to eat healthier to maintain my weight, I’ve been using the Redmond Sky Scales that helps me calculate my calorie intake, and learn more about what’s actually in my food. These scales are much more than just a kitchen scales, yes they do show you the weight of the food that you put on them, but what’s more important is that they show you the nutrients that are in your food.
Moreover, the scales are very accurate, as they can show up to 1gr accuracy. Measuring unit could be changed to pounds and ounces if desired. They have a tare deduction feature that makes it really easy to use these scales by setting values to zero, and they have a timer with a signal that allows tracking cooking time. Sky Scales automatically shut off after 5 minutes if not using them which I found very useful as I always forget to power off.
Using these scales is very simple, I downloaded the “Ready for sky” app on my iPhone and connected the app to the scales. When I put quinoa on the scales for example, it shows me the calories and the nutrients in the portion that is on the scales, and allows me to calculate all of the info of the ingredients that I’m using to create my dish. Now back to this mouthwatering recipe, I’m actually going to make this again tomorrow as just thinking of how delicious this is – is making me really hungry! I also like to prepare this beforehand in the evening to pack for lunch to take to work on the next day!
What’s your favourite way to have quinoa?
- 1 tbsp olive oil
- 1 shallot (chopped)
- 2 cloves of garlic (minced)
- ¾ cup uncooked quinoa
- ¼ tsp saffron
- ¼ tsp dried coriander
- ¼ tsp salt
- ¼ tsp ground black pepper
- ⅛ tsp ground dried ginger
- 3 cups of water
- 200 grams shrimp
- 1 tbsp olive oil
- salt & ground pepper
- ¼ tsp hot chilli pepper
- In a skillet heat olive oil, and add the chopped shallot. Sauté unit translucent, then add minced garlic and cook for a minute until fragrant.
- Add quinoa, spices and water. Close with a lid and sauté for about 20 minutes or until quinoa is cooked.
- While quinoa is being cooked, cook the shrimps by heating olive oil in a pan, then adding the shrimp.
- Season with black pepper, salt and hot chilli pepper. And sauté until cooked.
- Add the shrimps to quinoa and top with fresh parsley leaves.
